Carrot halwa/ gajar ka halwa is a rich carrot-based sweet dessert from the Indian subcontinent. Carrot halwa is a festival delight and prepared mostly on occasions like Diwali, Ganesh Chaturthi, and Navaratri. It is quite popularly served with vanilla/butterscotch ice cream scoop.
Ingredients
- Juicy orange carrots - 1 kg
- Milk 1 1/2 litre
- Sugar - 500 gm
- Elaichi/cardamom Powder
- Saffron (optional)
- Ghee - 3 tbsp
Preparation
- Peel and grate carrots
- In a heavy saucepan, Put milk and carrots.
- Boil till it becomes thick, keep stirring occasionally
- Once it starts thickening, stir continuously.
- Add sugar and cook further till thickens. (Do not add sugar early in the process as it may delay the cooking of carrots)
- Add ghee, elaichi, saffron, and stir on low heat till the mixture collects in a soft ball.
- Serve hot, decorated pista, and chopped almond.
