Carrot Stir Fry Recipe

 


Ingredients:


  • 4 Medium grated carrots
  • 1 big sized Onion
  • 3 tablespoon grated coconut
  • 4 green chilies chopped
  • 3-4 tablespoons of cooking oil
  • 1/2 tablespoon of mustard seeds
  • 1/2 tablespoon of cumin seeds
  • 10-12 curry leaves
  • Salt to taste
  • 1/4 tablespoon Turmeric powder
  • Chopped coriander leaves
  • 1 tablespoon of Chana dal

Preparation:




  1. In a kadai pour 3-4 tablespoons of oil , when oil gets heated put  1 tablespoon of chana dal .
  2. Add 1/2 tablespoon of mustard seeds and cumin seeds , let the seeds pop up and then add curry leaves , chopped chilies .
  3. Stir it for 10 - 15 seconds . Then add chopped onion and turmeric powder . Stir continuously till onion turns golden brown .
  4. Add grated carrots and salt to taste , stir well the carrot is half cooked .
  5. Add the grated coconut and allow it to cook completely .
  6. Lastly garnish with the chopped coriander leaves  and turn off the flame , cover the vessel with a lid for 10 minutes . 
  7. Serve hot
